  • 10-12 fresh curry leaves
  • 1 large onion, finely diced
  • 4 cloves garlic, minced
  • 2 tablespoons fresh ginger, minced
  • 2 tomatoes, diced
  • 2 tablespoons curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon garam masala
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 4 cups vegetable stock
  • 1 can (14 oz) coconut milk
  • 2 tablespoons lime juice
  • Kosher salt, to taste
  • 1/2 cup fresh cilantro, chopped
  • 4 scallions, thinly sliced
  • 2 limes, cut into wedges

Preparation

  1. Heat coconut oil in a large pot over medium heat. Add mustard seeds and cumin seeds; cook until they start to pop, about 30 seconds. Add curry leaves (they'll sizzle) and cook for 10 seconds.
  2. Add diced onion and cook for 5-6 minutes until softened and golden. Add garlic and ginger; cook for 1-2 minutes until fragrant.
  3. Add diced tomatoes, curry powder, turmeric, garam masala, and cayenne. Cook for 3-4 minutes, stirring frequently, until tomatoes break down and spices are fragrant.
  4. Add rinsed red lentils and vegetable stock. Bring to a boil, then reduce heat and simmer for 20-25 minutes, stirring occasionally, until lentils are completely broken down and creamy.
  5. Stir in coconut milk and lime juice. Simmer for another 5 minutes to blend flavors. The curry should be thick enough to coat a spoon but still pourable. Add more stock if too thick. Season with salt to taste.
  6. Bring a large pot of salted water to a boil. Cook ramen noodles for 2-3 minutes until just tender, then drain.
  7. Divide noodles among bowls. Ladle hot red lentil curry over noodles, ensuring each bowl gets plenty of the creamy lentil mixture.
  8. Garnish with fresh cilantro and sliced scallions. Serve with lime wedges on the side for squeezing.
