- 1 pint cherry tomatoes, halved
- 1 large onion, thinly sliced
- 6 cloves garlic, thinly sliced
- 1/2 cup dry white wine
- 3 cups fish or vegetable stock
- 3 tablespoons capers, drained
- 1 teaspoon red pepper flakes
- Kosher salt and black pepper, to taste
- 1/2 cup fresh basil leaves, torn
- 1/4 cup fresh parsley, chopped
- Zest of 1 lemon
- Lemon wedges, for serving
Preparation
- Pat sardines completely dry with paper towels. Season both sides with salt and pepper.
- Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add sardines skin-side down and cook for 2-3 minutes until skin is crispy and golden. Flip briefly and cook another 30 seconds. Transfer to a plate.
- In a large pot, heat remaining 2 tablespoons olive oil over medium heat. Add sliced onion and cook for 5 minutes until softened. Add garlic and cook for 1 minute until fragrant.
- Add cherry tomatoes and red pepper flakes. Cook for 5-7 minutes, pressing tomatoes gently with a spoon to release their juices, until they burst and create a sauce.
- Pour in white wine and let reduce for 2 minutes. Add fish stock and capers. Bring to a simmer and cook for 8-10 minutes to blend flavors. Season with salt and pepper.
- Bring a large pot of salted water to a boil. Cook ramen noodles for 2-3 minutes until just tender, then drain.
- Gently return seared sardines to the tomato broth just to warm through, about 1-2 minutes. Don't overcook or they'll fall apart.
- Divide noodles among bowls. Ladle hot tomato broth over noodles. Top each bowl with 2-3 sardines.
- Garnish with torn basil, parsley, lemon zest, and a drizzle of extra-virgin olive oil. Serve with lemon wedges.
